Going Vegetarian!


If your are new to vegetarianism, it is important to remember that you cannot simply exclude meat and fish from your usual recipes, because this will deprive you of protein and other vital nutrients that are essential to your health and wellbeing.  Meat and fish must be replaced with other protein and nutrient rich foods such as beans, nuts and seeds, bean curd and dairy products.  If you have allergies to any of these foods, take advice from your doctor or a nutritionist to ensure that you will not damage your health instead of enhancing it.  Here’s a recipe to get you started.  Try a light appetizer of Guacamole.

Serves 4
2 large ripe avocados
Juice of 1 lime
2 tsp olive oil
1/2 onion finely chopped
1 fresh green chile (poblano or jalapeno) finely chopped
1 garlic clove, crushed
1/4 cumin
1 tbsp chopped cilantro
Salt and pepper to liking

Mash the avocados with a fork until the desired consistency.  Blend in all your ingredients and place in serving dish.
